  • Story of the Cheese: Pecorino Romano is probably the oldest Italian cheese, dating back to Roman Times. Legend has it that a shepherd filled his flask with sheep's milk before a long trip and the motion during the trip caused the milk to naturally ferment. The idea for a new cheese was born. All Italian cheeses made from sheep's milk are known as Pecorino, but they vary enormously in texture and flavour, from soft and mild to dry and strong. The best-known hard Pecorino cheese are Romano from Lazio and Sardegna
